QUICK AND EASY MEXICAN CHICKEN


With just a few minutes and a few simple ingredients you can have a delicious Mexican themed meal for your family. This recipe is so simple and can be modified to suit your family's preferences as well as the ingredients you have on hand.  I have been making my own tortilla chips for a while.  This is certainly not necessary (purchased chips will work just fine), but they are DELICIOUS!
                                              
1 pound cooked chicken, chopped
1 package chicken taco/fajita seasoning
1/2 cup chopped onion
                                                                1/2 cup diced green pepper 
1 can refried  beans
1 T oil
Corn tortillas 
Oil for frying
Salsa 
Directions:
1.  Heat 1 tablespoon oil in skillet.  Sauté vegetables until tender, 5-7 minutes.
2.  Remove vegetables; add cooked chicken to skillet.  Add seasoning packet with a little water (1 T or so), stir until chicken is coated with seasoning; add vegetables back to the seasoned chicken, keep warm
3. Cut tortillas into quarters.  Heat a small amount of oil in a skillet to 375 degrees.  I usually do a "sample chip" to see if the oil is hot enough.  Fry desired amount of chips, drain on paper towels and season with salt.
4.  Warm the refried beans in a saucepan or in the microwave.
5.  If you are making guacamole, mash the avocado, sprinkle with lime juice to prevent browning, season with salt.  You can also add minced onion and tomatoes if you like.
6.  Serve, eat, and enjoy!
